Zucchini Brownies

Yesterday i was in a baking mode and i needed to take a treat to a relief society activity so it was great!

I found these on pinterest and i was attracted to them for one reason.
The looked yummy and they are healthy. 

 Zucchini Brownies 

 I found the recipe at here but this is how i made it. These were moist, spongy amazingness and go great with a class of {almond} milk. Oh and totally Husband approved!

Ingredients

1/2 cup applesauce
2 medium bananas mashed
1 1/2 cup brown sugar
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp salt
2 cups finely shredded zucchini (about 3 zucchinis)
2 cups whole wheat flour
1 cup dark chocolate chips

 Preheat oven to 350 degrees F. Grease and flour an 9x13 inch .
In a large bowl, mix together the applesauce, mashed bananas and sugar. Add vanilla and cocoa and mix together. Then add baking soda, salt, and zucchini and mix together. Add flour and walnuts and mix together. Spread evenly into a prepared pan. Bake for 25 minutes until brownies spring back when gently touched.

Loving Some Cardio

Sarah and I finally had a little gym time together so we decided to take advantage of it and hit the cardio area.

Just have to say I LOVE CARDIO!
Why? Because...
It takes away my migraines
Takes my mind off of everything that i worry about
Helps me to have more energy
Makes me happier
and overall makes me feel great

We did the elliptical for 25 minutes and then split up
Sarah did rowing for 10 minutes
I did the stair climber for 10 minutes

Sarah has a new found love for rowing but I'll let her tell you why another day. 
Isn't she looking great though?!
